I don’t want to fall completely down the sourdough rabbit hole (although you never know), but I’d sure like to learn how to make a decent sourdough pizza crust. What’s a good resource to start learning from the beginning?

One thing about that dough - if you leave it in the fridge to ferment I'd go 1 or 2 days. More than that and it starts being almost too sour. Straight yeast doughs seem fine up to 4 or 5 days but this one was more tart than I like when pushed that long.
