I know Panhead John my plating, photographic and cooking skills are lacking and need serious upgrade. What’s a poor boy to do?

Pretty much any sort of potato dish is fine by me. Baked potato, roasted red potatoes, cheesy potatoes, frozen tater tots... pretty much anything with potatoes.

I also love corn with my steaks. Frozen niblets are just fine with me but some good, fresh corn on the cob is hard to beat.

Cheesy potato casserole with a rib roast is the bomb!

Sautéed mushrooms with Worcestershire sauce and potato bundles, which involve par-boiled potatoes that are skinned and put in foil bundles with sautéed onions, butter, and seasoned salt or BBQ rub. The bundles go on the grill or in the oven just long enough to marry everything together, about15-20 minutes.

We really like the loaded baked potato salad linked below. However, it is a bit dry, so I'd be prepared to add just a little more mayo if it seems dry to you.

This recipe starts about 9 min in.

Garlic Mashed potatoes and a Caesar salad with Kenji's homemade Caesar dressing. In the summer I might sub the mashed with a warm German potato salad.

Troutman Steve I love hashbrowns with my steak ….. one of my all time favorite sides

I like oven roasted potatoes; roasted green beans with toasted chopped hazelnuts, lemon zest, and Parmesan sprinkled on top; mushroom risotto is nice with a steak too. If you are serving kids then go for Mac 'n Cheese or french fries.

And, of course, a pot of beans goes with anything.

For a real treat (and something different) check out my Hopalong Hominy recipe:

This is a great side dish for BBQ or really for anything. If you don't like hominy try this recipe anyway - I've converted a lot of people with this recipe. This recipe is based on Cowboy Kent Rollins recipe but I tweaked it to my tastes. I always cook this in a Dutch oven and I have only cooked it indoors one time, I prefer to

This is gonna seem weird compared to all the delicious tried and trues above, but my new favorite starch side for beef is this risotto-style farro. It eats like a beefy risotto but is less than half the work, fantastic:

As for green stuff, it is spring so i'd go with steamed or grilled asparagi or this excellent brussels sprout recipe (trust them on the olive oil thing): https://www.splendidtable.org/story/...ecorino-romano
