    Need pulled pork appetizer: taquitos?

    Hello my bbq brothers & sisters,

    My wife & I just moved across the country into a new neighborhood. Our neighbors are hosting a holiday cocktail hour for all the neighbors in our block. I’m planning on smoking a couple pork butts between then & now. I’d like to use that to make an appetizer to bring.

    I’m looking for ideas for appetizers using bbq’d smoke pulled pork.

    I’m considering taquitos, though I’ve never made them. I’m also considering smoked suffed jalapeños w/ cream cheese & pulled pork, wrapped in bacon & glazed w/ bbq sauce.

    Looking for thoughts, ideas & recipes please.

            The ABTs (smoked stuffed jalapeños) are always a big hit whenever i make them.

            Pulled pork empanadas are one of my favorites. Can either fry or bake them - I tend to bake just for ease and most grocery stores sell empanada shells and some have options for either baking or frying

            Pulled pork also works really well in potato skins

              So many amazing suggestions here.
              Thank you all very much.

              This is a sort of cocktail party w/ many people who barely know each other at all, hosted by a neighbor I don’t know… yet.

              I want this to be finger food that’s not messy. I also want the to be all pre-assembled so no on the spot preparation needed.

              I’m circling back to the idea of bbq taquitos. Here’s my idea, please let me know what you think, suggestions appreciated.

              Smoked pulled pork, mixed w/ caramelized diced onions & peppers, sweet smoky bbq sauce and Mexican taco cheese blend.

              Rolled in street taco size corn tortillas & fried.

              BBQ sauce and chipotle ranch on side for dipping.

              Your thoughts?

              I made them last night. I snapped a picture but it was blurry. I just restored it from the trash.

              I used frozen pulled pork that I thawed and reheated on the stove with salsa and queso fresco. I wet and microwaved the tortillas to make them pliable. I used a mustard based BBQ sauce to paint both sides, filled, and rolled them up, and then they went into the air fryer oven until crispy.

              I topped with guacamole, hot sauce, sour cream, and cilantro. I served them with an easy Spanish rice recipe I'll be doing again since it came out so well.

              Very tasty.

                jfmorris Yeah, I remember when you realized that. After reading that thread I bought one and we love it. I replaced the toaster oven so we lost no space.

                Haha. We have a pop up toaster and a small toaster oven. They live in two spots in the base cabinets when not in use, along with the Kitchenaide mixer. Other appliances that are used less frequently are on shelves in the laundry room. The Instant Pot, slow cookers, vacuum sealer and now the air fryer are in the laundry room...

                Again - it's SWMBO who is into decluttering the countertops - not me!

                jfmorris Same here, most of our lesser-used items are in the laundry room such as the Kitchenaid, food processor, juicer, dehydrator, etc. The air fryer, however, gets a spot on our counter next to the coffee maker because it gets a lot of use. Because it flips up space isn't an issue and the odd design of my small kitchen actually keeps it out of sight too.
