Like folks above had said, pig shots and ABT's are super good!!! Another one we did, not sure there's really a name for it is stuffed cornbread. Make some cornbread batter, grease a muffin tin, fill each cupcake hole 1/3rd full with batter, set a slice of Jalapeno on the batter, add a drop of bbq sauce then a little pulled pork then top with more cornbread batter. Bake per the cornbread directions or at 350 until golden brown and a toothpick comes out clean.

So this is what I did:
Made creamy chipotle ranch dip w/ quality ranch dressing, Greek yogurt, sour cream, diced chipotles in adobo sauce and combined.
Placed vacuum sealed bag of smoked pulled pork in it’s own juices in pan of hot water to reheat.
Sautéed diced yellow onion & red bell pepper in butter in a skillet.
Placed Mexican cheese blend in bowl.
Heated vegetable oil in large skillet.
Wrapped small street sized corn tortillas in damp towels and warmed in oven on low.
Added pork & juices to skillet w/ diced onion & pepper sautéed on low to combine.
Added cheese and pork / veg mixture to tortillas, rolled, pined w/ toothpicks & crisped in hot oil.
Served w/ creamy chipotle ranch and barbecue sauce on side.
Was big hit. Will do again in full size tortillas as a dinner.
