Bigger grill: SMC with riser to bring coals up to the cooking grill.
Fuel: Kingsford only.
Wood: Apple, Cherry, Hickory. Chunks or chips depending on situation.
Thermometer: Maverick ET 732 and a Taylor 806 E (not recommended)
But tasty anyway.
A couple of salmon fillets, oiled and seasoned with salt, lemon pepper and garlic powder. Fresh asparagus oiled and seasoned with salt and pepper. 3 minutes on a side on my Smokey Joe (trusty 22" Kettle doing duty as a Joe stand) and served with lemon zest/juice on the salmon and lime butter compound (with garlic, salt & pepper) on the asparagus. Good wife said the lime butter was tasty on the salmon as well.
