    Christmas menu

    So, we are hosting one of two christmas gatherings. Would love to see what everyone is planning for meals. from main to dessert. Thank you in advance.

    Due to my MIL not having had a real Thanksgiving dinner, we are re-doing Thanksgiving for Christmas

      Planning 2 dinners. One will be SRF cowboy steaks smoked and seared with a garlic cream sauce, green beans with lemon and capers, potato gratin, French silk chocolate pie, and pig brittle.
      The other double smoked full ham Sarsaparilla basted with a horseradish sauce on the side and pork gravy, potatoes in shallot butter, Broccoli and Cremini mushrooms in a bechamel sauce, and ? for dessert (still working on that)

      Normally mix it up every year between Ham, Prime Rib or Turkey.

      All the classic sides. Mashed Potatoes, Green Beans, Stuffing and Succotash

      Dessert normally Apple Pie, Cannoli and a Cheesecake.

        For Christmas we forgo the large meal and just do a bunch of snacks. Last year I did some carne asada skirt steak and set up a taco bar and other people brought a bunch of different snacks. This year I am thinking pork belly burnt ends. I have a few racks of ribs in the freezer and might pull out a couple of those and cook them up too. Those can sit on a plate and people can just gnaw on them over the course of a couple hours. Chicken wings are always tempting too.

          If I were in control of it completely, doing all day snacks is what I would do, maybe even a bunch of small meals like pulled pork tacos, and flank steak carne asada, all no brainer simple stuff.

          My mon used to make a lasagna in advance. Just reheat with a loaf of good bread and salad. Nice and easy after all the madness. I have 4 brothers.

        It will just be the two of us this year, so probably not much. However, Prime Rib would be at the top of my list followed by short ribs, then a rotisserie chicken. Too many good sides to list, but some kind of taters and somethin' green too. As for desert, I'd have to go with either a pie made with this easy pie dough. or this cheesecake. The reason for this particular cheesecake is that it doesn't require a water bath making it much easier to make. And I've always had this pie dough turn out great.

          I think I may try a cheesecake if I get my shit together in time. I would like to smoke one. maybe a smoked flourless torte and a pie as well. I am definitely doing Prime Rib this year, and maybe a pulled pork shoulder off the wsm to give everyone a treat.

        prime rib roast, mashed potatoes, green bean casserole, and pecan pie. Nothing from a can, all from scratch.

          I think mashed potatoes and gravy are my favorite part of a big Thanksgiving/Christmas holiday meal. But of course you need to cook a big hunk of meat for the gravy so might as well throw that on my plate as well.

        My kids just like giant hunks o' meat on the table. So it's always a day of cooking for leftovers. LOL!!
        Capon, Prime Rib (mainly for me!!!) Pit Ham.
        Gotta have twice cooked mashed potatoes (a ton of butter, more butter and Parmesan cheese) and duck fat Brussels sprouts.
        Chocolate cake

        Whiskey (for me)

        My foodsaver works overtime on Thanksgiving and Christmas.

        Smoked Chuck Roast, Cheesy Hash Brown Casserole, ABC Salad (Apples Broccoli Cranberries), Green Beans, Carrots, Homemade Rolls, Peppermint Stick Mousse for Dessert. Of course there will be Wine, Beer, Coffee, etc ...

          Yep HouseHomey, I'm the daughter -- generally lurking, occasionally commenting, wishing I had more time for smoking the foods. I'm a tad concerned that Skip hasn't confirmed I get to attend the Christmas gathering...maybe because I haven't contributed a dish yet.

          skipsdaughter ha! Maybe because he’s hogging the menu. 😃 How about a chimichurri or some pickled onions n such to go with the chuckie? Or perhaps a spicy/sharp sauce to go with the hash brown casserole? More beer is always an option.

        Not really sure, will be at my Mom's. Last year she asked me to do a brisket. I know we will have turkey or some kind of fowl, greens, mac and cheese, some kind of cornbread, probably some deviled eggs. And lots of deserts - sweet potato pie, lemon meringue pie, apple pie, a couple of cakes.

          I do a Sunday Sauce on Christmas Day for a boatload of people. Short Rib, Pork Shoulder, Italian Sausage. Cheesecake for dessert. Whatever anyone else brings for sides. All cooked indoors.

            Christmas is a 3 day marathon for me.

            Christmas eve, Tri-Tip and lobster with my friend and his family.

            Christmas with my wife's family, it looks like Lasagna. They're the simple, easy peasy folks.

            Day after Christmas, my side of the family and we're going back and forth. Scallops, Salmon or Cornish game hens. That's what we're chewing on so far....

              Our tradition is to fix a big French Toast casserole the night before and let it sit in the fridge over night. Get up Christmas morning and pop it in the oven. Everyone gets up, opens their presents and by the time everyone's done so is the casserole. We've always just let the kids play and we just snack or eat sandwiches all day. But the day after Christmas is when we have a nice dinner with family. I fix a nice bone in rib roast with some rosemary and thyme fried potatoes and ask everyone to bring something. Kind of like a pot luck dinner.

              As my mother has gotten older, I have taken over the preparation of the main for the Christmas meals with my sister contributing sides. I usually try to do something different to broaden my family's narrow food horizons. This year it's leg of lamb (I'm constantly amazed at how many people have never eaten lamb).

              Since I have to drive a couple of hours and the exact time for dinner is in flux, I plan to start it at home on the grill and then finish it in a sous vide jacuzzi.

                Well, as I mentioned Thanksgiving is our family holiday. My kids and their families celebrate Christmas with their spouse's families. Been that way forever. So, for us its a movie (this year Cats) and take in Chinese. Come home pour a drink or 2, and watch the rest of the NBA marathon. My wife will curl up with Hallmark movies. All is good.
