    Have the new trailer I just sold at my house ready for a 5am start manana (6am at Sofitel hotel) . Cooking for 800 tomorrow. Baby back ribs, hot smoked salmon, beef ribeyes and mojellas (sweetbreads) on the menu. The caterng company is so disorganized. I gave them the recipe for memphis dust 3 days ago and told them to make a SPOG rub for the beef. 4pm today they call and dont have any of the spices, so I had to run out and get it all. (You have an important event for 800 people and can organize yourselves to get the ingredients)??? Last year they forgot water for the catering staff so we were sweating in the 32c sun all day without water. Hopefully will have time to post pics tomorrow.

    Impressive pit. I like the folding chimney stack and the way it’s sporting your brand.
    Have fun, enjoy and keep us posted. I’m sure lots of happy folks will be complementing you and your team for pulling this off. Wow... cooking for 800 people is for sure a challenge in itself. You are the right person for it.

        If a hotel kitchen doesn't have the ingredients for Memphis dust what do they serve for meals, butter sandwiches....
        If anyone can pull this off you can....
        Your rigs get any bigger your going to need to start running tandem axles.

                    Back home now. New pit worked a charm.. everyone content and food turned out great. I love that big hotplate...

                      use the one on the side of our magnum snipers to sear off steak for dinner and eggs, bacon, hash browns for breakfast at events. One that size heat fairly evenly?
