Have the new trailer I just sold at my house ready for a 5am start manana (6am at Sofitel hotel) . Cooking for 800 tomorrow. Baby back ribs, hot smoked salmon, beef ribeyes and mojellas (sweetbreads) on the menu. The caterng company is so disorganized. I gave them the recipe for memphis dust 3 days ago and told them to make a SPOG rub for the beef. 4pm today they call and dont have any of the spices, so I had to run out and get it all. (You have an important event for 800 people and can organize yourselves to get the ingredients)??? Last year they forgot water for the catering staff so we were sweating in the 32c sun all day without water. Hopefully will have time to post pics tomorrow.
