      Finally decided on my cook for today. Last weekend when 58limited and I were in Lafayette, we hit up some Cajun meat markets. One of them was a place called NUNU’s and I bought one of their boudin stuffed pork chops, they looked really good. Will be doing it tonight on the SNS Master Kettle with some hickory for a little smoke. Sides TBD….

      With finally an empty house it is just Kathy and I today. We are dog sitting “Ziggy” so the local family could get away and camp up at Lake George Michigan for the 4th with friends and some relatives.

      Menu will be us sharing a New York Strip which I had cut to 1-1/2 inches and weights in at just over 16 ounces. Joining it will be kettle baked potatoes, asparagus, and some sort of fancy salad Kathy is making.

      Luckily the heat index here came down from 115 yesterday to a manageable 105 today. 😉
      Everyone enjoy your 4th and stay hydrated.

          Mom and Dad made up some great pulled pork, my sister made some good slaw…and I brought ruffles and green chile chip dip. Was a great night hanging out waiting for the fireworks at the lake. Even saw two college buddies and played a few games of corn hole. Had a great time this evening with the family and friends!

            Sparks are still flying here….. (illegal fireworks)

            Easy dinner. Flat iron, bleu cheese butter creamy spinach, baker. Focus on the flat iron and spinach. Smidge of white oak during the reverse sear.

              That looks great! I’m a big fan of spinach with smoked meats, I’d go so far to say it’s underrated even. Nice job!

              The spinach is a total shortcut from steakhouse creamed spinach. I steam the spinach and add a couple tablespoons of Boursin cheese and stir until melted.

            One of my parents best friends passed away last month and his family always hosts a 4th of July party every year so this year they decided to have a Celebration of Life memorial service as part of the annual 4th of July party. So I fixed Pork Belly Burnt Ends. The whole belly was about 12.5 lbs most of it was turned into burnt ends the rest I cut into strips and smoked. Did not get a final picture of the strips. The burnt ends were a big hit and there were none left at the end of the evening.

              Finished the short ribs at 205*F (4 1/2 hrs). Rested in a cooler for 1 1/2 hrs. Ate one and will eat one ever other day this week until they're gone.

                I posted this in the show us thread too. Ribs, fries, texas toast, some mixed veg. Salt, pepper, texas sugar by meat church. One slab with Blues Hog Championship Blend, one with Tennessee red. On the Bronco.
