my boss stocked a few items and they are called “tinned fish”. I told her the #10 cans of tuna we use for our tuna fish salad is assuredly not called tinned fish. 🤣🤣🤣

I thought about this for a bit. I don’t eat lunch. You’ve seen my breakfasts, after those I’m not hungry for about 10-12 hours.
Soup. You’ve can make soup from ANYTHING. We had a local diner, Junie G’s. Whatever the special was, the next day’s lunch included soup made from that. Reuben sandwiches became pastrami & sauerkraut soup. Lasagna became lasagna soup (I don’t remember how). Roast beef, ham, turkey, chicken, fish, obviously. But whatever you had for dinner the night before, transform it. Change it just enough to make it different. And soup like that is easy, almost everything is already cooked.
Also, ramen. Soup, of course, but when I have it, I usually just make noodles without the broth, using butter and half the seasoning packet. You can add mushrooms, onions, and peppers. Or carrots, onions, & celery. Or just butter, garlic, parsley, and Parmesan.
Take each of the suggestions in this topic, and rotate through them. That will get you through a few weeks. You can repeat the ones you like, skip the ones you didn’t, hold the ones that are too complicated for when you feel like making them, and repeat the ones that are really simple. Ain’t nothing wrong with buttering a couple slices of toast for lunch, after all. Or make toast with peanut butter and fresh blueberries. That’s actually really good.
Now that tomato sandwich season is closing I turn to Wasa Bread season. Top it with basically anything you can imagine and you will have a satisfying meal.
Fortunately our greenhouse is still producing ton of tomatoes. Carolyn thinks we're good until December 1. A banner crop this year so plenty of tomato sandwiches ahead along with more sauce.
