I would like to get some ideas, suggestions for lunches. Getting tired of deli meats and also looking for some healthier choices. We also do tuna, tomato sandwiches, dinner leftovers and maybe a occasional salad or taco salad if ground beef is leftover. Looking for something different that we haven't thought about or tried.

I still struggle with a healthy lunch. No more lunch meat, hot dogs, or processed frozen foods. ☹️
Some things we have tried to change it up.
Leftover protein then fruit. Raspberry’s and Blackberrys are my favorite, but fresh pears, peaches, apples sliced or cubed. We are lucky enough to get just about any fruit that grows. Today was leftover smoked chuck on pumpernickel, with grapes on the side.
Tomatoes and cucumber salad with olive oil, balsamic drizzle, and lots of Italian seasoning.
We were gifted a charcuterie kit which turned out to be a lot of fun trying different combinations of food. A healthier version would forgo the sausages and cured meats in lieu of more nuts, cheeses, fresh fruits, carrots, celery etc. As long as you are going Mediterranean, have a glass of wine and a nice nap.
Hoping some more ideas come out of this. 👍

I always make extra protein that lasts for a few days for lunches. Which are really good salads. I add some good/healthy items to the salad that jazz it up. Usually some veggies of some sort, along with a hard boiled egg, some almonds and cottage cheese. It’s not sexy, but I enjoy it and it hits the macros needed for a lunch meal.

My wife and I share a sliced apple a few days a week at breakfast time. I cut some of it into slices and some into wedges, put it on a plate, and always salt it. Diamond Kosher. If we have a tomato that needs to be eaten, slice it into 1/4 or 1/8 pieces and just eat it. Breakfast, lunch or dinner.
While I think Ruffle’s Potato Chips or Fritos are some of the best vegetables on the planet, if we clean and chunk up veg - carrots, celery, radishes, broccoli, any kind of pepper like red, green, poblano, etc., I find the crunch of the vegetables (carrots, radishes, celery) will satisfy my desire for “crunchiness”. I don’t want crunchy chips so much if I snack on crunchy veg.
Also, I realize the original post is about lunch, but I usually eat beans and toast for breakfast 3-4 times a week. Right now it is Mayocoba beans (with onion, garlic, jalapeños) and toast. Two weeks ago was traditional baked navy beans and toast. Add some fruit or cheese on the side if you like. This could be a quick lunch as well.

And I forgot to mention canned fish:
A brand I trust is King Oscar. Not the most expensive and not the cheapest (this part is important with canned fish).
All time favorite is King Oscar Kipper Snack, smoked herring.
They have canned Salmon with Lemon or Mediterranean style that are both very good.
Their Sardine and Mackerel varieties are also very good.
Some canned fish with crackers, a little cheese and some chopped vegetable is a good lunch. We do this two or three times a month.

Love canned fish. Smoked trout, saltines and a crisp green salad with EVOO with a variety of veggie additions is one of my favorite meals. I bought the Fish Wife cookbook and have made some great canned fish meals from it. Canned cockles with spaghetti noodles is very good. Alas, I have gout now and have reduced canned fish to once per week

Most of the time, my wife and I split a can of fish at lunch and usually just with some saltines. The rest of the lunch is salad or chopped veg, cheese and some pickles.

I just thought of something I haven't had in years, but it's now on my to cook list:
Brown and crumble 1/3 lb of your favorite tube sausage in a pot. Cook a package of Zatarain's red, (or black), beans and rice according to the directions in the pot with the sausage. Stir to mix and serve. This is a one pot meal that's easy to make.
Any more than 1/3 lb of sausage overpowers the flavors of the RB&B.Last edited by RonB; October 25, 2025, 09:57 PM.

We'll make sandwich meat with left over roasts, brisket, pork.......chicken. Never thought of a steak specific for lunch.

Here are some of my ideas:- Canned fish. See my comment above.
- Canned or freshly made soup. I doctor up Campbell soups and add more ingredients to give more depth. E.g. I take a can of home style chicken soup and add more cubbed chicken, add sautéed celery and carrots, add more broth and put in fresh dill. Might even make some matzo balls and add them to it.
- Deli sammys. I know you’re a bit tired of those, but go the extra mile. Steamed pastrami on soft rye, grilled sammys, sub sammys. Had a roast beef Poboy here in Lafayette and I know I could recreate that at home (and I will).
- Hot dogs. Open a can of chili and have some chili dogs. Very easy peasy.
- I cook 3-4 times a week and we always have left overs.
- Grill/roast a large piece of meat, like a tri-tip or lamb for dinner then use the left overs for stews, sammys, stir fry, etc. I make leftover leg of lamb stew that is delicious.
- I also make steak or chicken bowls. Bowl of rice, protein, veggies on top and sauce.

I do a lot of rice, with beans, or with veggies for a quick fried rice, etc…easy way to add a bunch of good into the days fuel.
i generally make a big pots of rice, lentils, other beans etc, and just grab from it throughout the week as I make. So most of the prep has been done already,

I enjoy tuna salad. Wrapped in romaine instead of on bread is super healthy and you’ll end up eating more protein that way instead of carbs.
I mixed canned tuna w celery, red onion, sweet gherkins, Dijon, mayo and S&P. Good crunch and very satisfying.

As w others above I always make xtra protein. As well as rice. So reheating some meat and rice, adding chopped lettuce, tomatoes, shredded cheese etc roll it up in an extra large tortilla w some hot sauce - banging burrito!
