Just wanted to check in and see what everyone’s plans were for the weekend…. Going anywhere? Cooking anything special? Not sure what I’ll be cooking this weekend but it might have to be indoors, afternoon rain expected each day. 😠 But….I’m trying to think of something special or different than the usual. Maybe I’ll steal someone else’s idea……

Well, based upon our shopping at HEB last night, I'm cooking wings and then a whole chicken. Wings on the Weber Kettle with Vortex and think I'm gonna break out the PBC for the whole bird. Been a while since the PBC got to cook something.
Looks like pulled pork sandwiches for football watch gathering Saturday and a brisket for the potluck lunch at church Sunday. This will be their first taste of my smoked goodies. You only get one chance at a first impression.
I got a hankering (you like the way I use that Texas slang...) for BBQ spareribs this weekend. Served with potato salad and sweet corn on the cob. Ribs are on sale at S&F.
Also going to roast some chicken on my PBC like jayjordan. Been awhile since I've pulled out the old PBC and after seeing jasonwilliams14 post of his first cook on his new PBC, I've just got to do it.
I took a beautiful picanha out of the freezer this morning, to cook tomorrow. I haven’t decided if I’ll cook it whole or cut it into steaks. I’m leaning toward cutting it first. The marbling in this has me really looking forward to eating it.
Nothing planned. Had friends over last night. Son and family are out of town. So just me and the wifey all weekend. Probably brats, burgers, etc. I was distracted by other things in recent days and didn’t take anything out of the freezer. A shame too. I have some goodies in there. But being retired, every day is a holiday so I’ll pull something out and cook it whenever it’s thawed. 🤷♂️

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
Nothing planned other than cooking, eating and football. Tomorrow wings on the Kettle with Vortex. Sunday a little surf and turf. Picked up these lobster tails at Whole Foods this week. Usually for 2, 4 oz. Tails $24. These on sale, $12.50. My only regret I only snagged 1. I got the NY Strip Steak too on sale for 9.99/#.

On Saturday there will be some nachos and poppers for the games, and then on Labor Day I’ll venture into a cook. I’ll be trying some semi-blasphemy St.Louis Ribs. A friend separates them into pairs, so I thought I would try it. They should take a little longer than blasphemy ribs, but a lot less time the a full slab. I’ve done vortex blasphemy St. Louis’s ribs which cook really fast, so I thought I would cook these at 275 on my BGE. My take on cooking ribs is that there are many different ways to cook them, and they are all good but different.

Tri-tip on the Buckaroo tonight. Some to-be-determined seafood tomorrow. Will depend on what looks good at the fish monger. Just got a pile of back ribs delivered from Creekstone Farms so will likely smoke some of those on Monday.
