I usually like to do something. Nothing fancy, something to get my Irish up. Certainly there will be some Guinness in the mix. Of course corned beef is a natural. I don't have the time and honestly the desire. I think I can get a cooked one local. I don't know. I'm thinking out loud. Ideas are welcome.

Corned beef, cabbage and carrots. But gonna roast the potatoes based on the recipe I read through last night. Will also bust out the Irish Whisky Egan’s Conviction. The corned beef is store bought, but I think it’s same brand I’ve picked up last few years and really enjoyed it. Simple too!
Nothing fancy, but looking forward to the meal. Have to do this on Sunday night as well, traveling first part of next week but Wednesday night when I get home….definily gonna make Reuben’s and love the homemade kraut with it!

I have this weird idea of pastrami tamales in my head, so I plan on stocking up on the post St Patrick's day sale corned beef to experiment.
Not sure if we'll cook anything for the day of or not.
Might I suggest looking at legit traditional Irish foods for the day and not the stereotypical American offerings? We used to have a bar here that had corned beef and cabbage on the menu every day BUT this one, and instead would do traditional dishes. It was kind of a nice change of pace. One interesting offering is Spice Bag/Spice Box, not holiday specific though some Irish families do specifically seek it out on the day.

SheilaAnn I know right? It popped in my head and I can't get it out, so... it's just gonna have to happen. Ive found some flavor inspiration via pastrami taco recipes but I'm gonna do the pastrami with Mexican inspired spices and I can't find any recipes to use as guard rails, so just gonna wing it.

Here's a twist, we will have St. Patty dinner at our favorite Mexican restaurant in Colorado Springs Monday. Have to spend the night there for Carolyn to get her eye shots. I guess at least a side of green. Our corned beef dinner will be this Friday so that we can have the leftovers before our AZ trip later next week.
