    Another recipe screwup rant (update: she changed it!)

    I saw this recipe for jalapeño burgers. It’s not worth sharing; it’s a useful recipe for people who are still learning how to cook, but there’s nothing special about it (mix cheddar cheese and chopped peppers into ground beef and make burgers, with suggestions for plating).

    During the long-winded introduction to the recipe itself (which is fine, it’s how these self described content creators get paid, and I’m all for writers getting paid, especially if I don’t have to read if I don’t want to), the content creator writes, “…jalapeno is not for the faint of hearts​….” Okay, I disagree, but lots of people can’t handle any capsaicin. But then later, while offering pepper choices: “Serrano is milder than jalapenos….”

    GOOD GOD. Anyone who reads that, and decides that they’re going to make jalapeño burgers but sub in serranos because they don’t want as much heat… those people are in for a surprise. Serranos are about 5x hotter than jalapeños!

    And that grinds my gears. This person holds herself out as an expert, and doesn’t know squat about the food she is writing about.

    Anyhow, there it is. Today’s rant from old guy who shakes fist at clouds.

    One of the most overused words in the English language is the word expert. It has lost almost all meaning now that it has been co-opted by media and content creators. We have too many so called experts in all fields and especially those whose only degree in a field is from the University of Google.

      This author has won awards for “Best Woman’s Food & Lifestyle Blogger – South-West US” and “In 2022, I had the experience of a lifetime being a Chef on the Food Network doing Guy’s Grocery Game Global Food Fanatics.”

      This is where an editor makes all the difference. I think what happens sometimes is people write too quickly. I couldn’t count the number of times I wrote “flat” when I meant “point” while talking about brisket.

      The “Best Woman’s Food & Lifestyle Blogger - South-West US” is awarded by Corporate Vision Magazine whose main purpose is awarding awards for PR. Probably not a subcommittee of the Nobel Foundation. 😉

    Do you ever catch yourself saying what would Walter Matthau do? With the joys of a sensitive gut from UC I really limit my hot pepper intake. Last year I found that Texas A&M had devolved a Jalapeño with very little capsaicin. They have great pepper flavor but not much heat at all. I know that doesn’t sound manly but they are good. I have seeds ready to plant this spring.

      It’s easy to get hung up on the “manly” part. I genuinely love the taste of jalapeños, serranos, and habaneros/scotch bonnets. Arbols taste flat to me, they don’t “pop”, they just burn. Ghosts and scorpions are good, but they’re too hot without being blended into something else milder. And Carolina Reapers taste like hot dirt to me. I have a bottle of Pepper X sauce that I’m afraid to try.

    UPDATE!

    I found the author’s blog and, using the Contact form, (nicely) informed her of the error. NOT TEN MINUTES LATER, she emailed me thanking me for the correction, and said she will change it!

      I was able to find her and it isn't changed yet. This is why I also do not watch the Food
      (Game Show)Network anymore.

    Any influencer over the age of 30 can become a self-professed foodie & recipe blogger, and the level of "smort" shines through every time.
