Christmas was usually lasagna for dinner. Made the day before because growing up with 8 people in the house was crazy Christmas day. My mother, grandmother and whomever they could nail down would turn into a cookie factory some evenings before the holidays. Gingerbread, sugar cookies, oatmeal, springerle, chocolate chip, mexcan wedding balls, peanutbutter kiss.........all packed in large tins and put in the chest freezer to be brought out as needed during the holidays.
Now adays Mrs. H will make either crab soup or crab quiche and a rib roast I'll do outside.
New Year's Day was sauerbraten with kartoffelklosse. (potato dumplings) We still do this once and a while.

When I was a kid, my mom and grandmother (who lived with us) would bake what seemed like thousands of cookies of many, many varieties at Christmas time. They were so good. So as a result I have been a cookie monster my whole life.

Christmas Eve is all about New Mexican food, it’s all I’ve known. And now, it’s more about keeping the tradition and being able to cook the food that my grandmother and grandfather taught me to cook as I grew up. Carne Adovada, Posole, Red Chile and red chile salsa. My parents make taquitos as well, but that’s what our day in food is and I love everything about it because it means something to all of us being able to carry on this tradition every year. Plus, the food is amazing
Fried calamari, spaghetti with red clam sauce, shrimp (fried or cocktail), other fish/seafood offerings (what can I say? Mama was Italian so there was the Feast of the 7 Fishes). Plus cookies. Lots and lots of different cookies.
I totally forgot about fudge! I love fudge around the holidays and sadly I haven't had any fudge so far this year. Might need to whip some up over the next couple days.
It’s not Xmas without tamales! The season is filled with tamales and eggnog. Xmas Eve is tamales and tacos. Xmas day is prime rib or some form of roast beast.
I love tamales for Christmas. Years ago a very good friends mother would send him over with tamales for me every Christmas. There would be red sauced, green sauced, and fruit tamales. The fruit ones were the perfect desert. Those were great times.
