I'm gonna argue with you on one point - not curing and smoking your own pastrami!

Like Tom Petty said, the waiting is the hardest part. If I had known how easy it is to cure meats, I would have done this a LONG time ago.
I've been doing a lot of game roasts as SVQ pastramis. On one hand, it takes a little more than a week to do - 5 days to cure, overnight to desalinate, 3 days in the sous vide, 4-6 hours to smoke. But everything except for the smoking, takes a grand total of 11 minutes of actual work.
It's also something that not/any of my friends here make, so it's always a hit. Got a little barter system starting where my hunting buddies bring me two roasts, and they get back 1 finished pastrami.
