Korean Street Tacos
If there’s a fusion of cultural foods for tacos, I think this could just be at the top. The homemade tortilla, the vehicle to deliver the sweet and salty beef bulgolgi that is paired with kkakdugi (daikon radish kimchi), rounding out all the flavors with the umami of the fish sauce and the heat from gochugaru (Korean chile powder). And to top it off, scallion, slivers of jalapeño and thinly sliced radish.
Ask my wife which taco she has enjoyed this week the most, and this quickly moves to the top of her list - she’s a sucker for the flavors an Asian dish packs!

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

i didn't want to be left out when it's taco week at my house!
leftover grilled ribeye that has salt, table pepper, and garlic, added some cumin and some ground pepper blend. hit it hot and fast in a pan. put in tortillas browned in a pan with peppers, onions, cheddar cheese and a white cheese sauce and Cholula. i started eating before i remembered i should take a picture.

Thursday taco night at the casa!
Fish Tacos
Showing the versatility of tacos this week - tonight, we have fish tacos. Just a few filets of cod, seasoned with Holy Voodoo and seared in the CI then flaked apart. But, I think the star of this is the freshness of the pico de gallo that adds to the fish. Completely different flavor profile than what I’ve done the rest of the week, but a nice change of pace as well with the lightness of the fish.

I think I smiled the entire time I ate this tonight. Homemade tortilla with a smear of Nutella and a sprinkle of granola with some fresh raspberries. I think Nutella makes everything taste good…so whether it’s a tortilla or whatever, I’ll probably like it!

Okay, I am ready to do some fusion tacos that I think like the barelfly desert taco are way out of the fusion box.
I grew up in New Orleans, and as the story goes that the Sicilian workers in the French Quarter would go to Central Grocery in the Quarter to buy their lunch consisting of salami, cheese, ham, olive salad, and a muffuletta bread which was pretty awkward to eat without a plate or utensils. The proprietor decide to slice the muffuletta bread and put the other ingredients between the two halves wrapping it original bread wrapper. Thus the Muffuletta was born!
So, since the Muffuletta was a kind of street food, my first offering will be muffuletta street tacos. Since apples and sharp cheddar cheese go well together my dessert street tacos will be fried apples topped with sharp cheddar cheese.
