    I just watched a Meat Church video on Beef Wellington. I bought a whole prime beef tenderloin from Creekstone Farms on sale last year, I decided it was time to use it. So, Beef Wellington for Christmas!

      I'm using store bought puff pastry. I tried making my own but I decided it is much easier to buy it.

    Our recently married son and his wife want to host… makes me all kinds of happy. Brunch is Bagel & Lox, avocados, and bacon (cooked on the Weber). Supper is beef dino ribs, cole slaw, and Mexican street corn.

    Just the two of us so everything is simple.

    Christmas Eve: Green Chile Chicken Tamales, Slaw, and Charlie Brown beans.

    Christmas Day: Smoked Prime Rib, Twice Baked Potatoes, Fruit salad, and my wife's delicious Pecan Pie.

    My parents and one of my brothers will be staying at my house for Christmas Eve and Christmas. For Christmas Eve I picked up a small SRF Kurobuta ham from my grocery store today. Side will be sweet potatoes and something, trying to keep it pretty easy but still tasty. Christmas will be a strip roast, mashed potatoes, gravy, green beans, and rolls. I did a strip roast last year and I’ve become a big fan. I trim off the fat and gristle and tie it up. It’s cheaper than prime rib, there’s no fat chunks, and it tastes better than the eye of rib eye (not better than the cap).

      A few of your points on the rib roast are why I’m going with tri tip this year. I like ribeyes and have a stack of dry aged in the freezer, but tri tip is just good!

      Enjoy that strip roast! That’s gonna be some good stuff!

    This year we're going to switch things up in honor of my bride's family tradition; BIG, FULL meal Christmas Eve, leftovers and some other additions to graze on Christmas day (after her infamous Egg Casserole and bacon for breakfast).

    Christmas Eve:
    a whole, fresh turkey breast from Publix which is getting dry-brined today & Meathead's Poultry Rub tomorrow before going on the Weber Kettle
    a "Carver Ham" we picked up from Sam's Club - a beautiful-looking piece of boneless ham which we'll glaze with a Bourbon-Peach sauce and double smoke, also on the Weber (I'm more inclined to use the kettle for short cooks like these).
    Homemade potato salad
    Green Bean Casserole
    Cranberry Sauce
    Honey & Butter-glazed carrots
    Stuffing & gravy

    Our family tradition for NYE is, and has been a pork rib roast slow baked in sauerkraut with some sausage/bratwurst tossed in for the last hour or so along with smashed taters.

    New Years Day is time for the fam to chill and start that diet 😂

    Praying for all you brothers (and sisters) in harms way with this crazy storm coming - even here in West-Central Florida we have a hard freeze warning!

      barelfly - Yep, I'm from the German/Polish area of SW Pennsylvania - Sauerkraut is a staple ... and we prefer Bubbies if/when we can find it, which we did get 4 jars this year

    Tomorrow, Friday 23 Dec
    Lunch at my daughter’s with her boyfriend, his kids, his mom. I’m double smoking a Costco spiral sliced ham with a raspberry-chipotle glaze for my contribution.

    Christmas Eve
    Wife is making chili for football watching, daughter and boyfriend. I’m doing jalapeño popper appetizers. Also smoking a dessert I’ve been wanting to try—white chocolate bread pudding. I am a firm believer that white chocolate isn’t because it’s not brown, but the recipe is simple and sounds good.

    Christmas Day
    Daughter and her boyfriend at our house for exchanging gifts. Smoking a beef tenderloin with an onion and mushroom side. My grandmother’s bing cherry salad will be served as well as store-bought (to keep it simple) mashed potatoes and Brussels sprouts with bacon. My daughter is baking derby pie for dessert.

      barelfly this was an early holiday dinner with our daughter visiting from out of town. The kraut was fresh but that was coincidence because we made a large batch about three weeks earlier. We're canning the eight-gallon batch tomorrow.

    I’m from Southern California, and it’s not Xmas without tamales and tacos! 🌮🎄🌮🎄🌮

    Xmas Eve will be green chile and cheese tamales, pork tamales, and carne asada tacos!

    Xmas Day we do dinner at my in-laws, and my FiL usually does a roast.

      For those 'offended' by the Xmas shortcut, as I once was, a good brother informed me that it's all about perspective - the "X" is just a cross turned sideways!

      X is also the Greek letter Chi, the first letter in the word Χρῑστός, which is Christ. Xmas is an abbreviation for Christ (Χρῑστός)-mass.

      Just seen your comment. I will have to start using commas. No they were just Pork Carnitas I used for my homemade enchiladas. Funny I seen this as I made another tray of 20 on Wednesday

    Nothing special for Christmas as it will be just two of us. I will eat my fill of pickled herring for sure. Our big meal will be on New Years when the family finally arrives here. (Scheduling will depend on certain testing since some family will be flying in from as far away as Austria.)
    Because of barelfly ‘s influence lunch will be
    Carne Adovada and Posole which will be a new experience for most of our family members.
    Dinner will be
    Prime Rib roast from Creekstone
    Yorkshire pudding and
    extra cheesy Hasselback potatoes au gratin.

    Meatballs and Christmas sausages
    Sauerkraut and potatoes
    Served with ribfat and/or rib sauce

    Bevrages;
    Christmas beer and Christmas Aquavit


    Ricecream with strawberry sauce as dessert.

      It wil be my first Christmas alone so i’m planing on grilling a 2” strip steak wis a baked potato on the side.

        ssennott - don't know the backstory, but very sorry for your loss
        My 93 year-old dad came down here to FL from PA last January for a "visit" after losing his wife of 20-something years. He's still here ... it's his first Christmas with us and second without her.
        His grieving process continues despite his faith and we're trying to 'hold up his arms' as he walks this out ...

        Sorry to hear of the loss. Front what other's have shared it seems you will basically lose two years, so don't panic and hopefully things will get better. a 2" strip steak should be nice way to enjoy (far better than TV dinners). Take care partner.

      Christmas Eve will be lobster fettuccine Alfredo and Christmas Day will be Veal Osso Buco with mashed potatoes and a good old fashioned green bean casserole (No canned ingredients involved).

      As far as Christmas, my wife and had traditionally did a movie and Chinese food take out. Haven't done the movie thing since you know what. We're open to it but she doesn't see anything that interests her. Said she would go to one I wanted to, Avitar or Babylon. I know she won't enjoy so maybe next year. We'll still bring in Asian cuisine. Plenty of football so not all lost.

        Our typical is a Japanese steakhouse but we skipped last year and will probably skip it again this year too.
