Who you askin'? For mine, those are pig shots - a medallion of polska kielbasa, wrapped with bacon and pinned to make a 'shot glass'. Then you fill with whatever and smoke. My two types were a smoked cream cheese and pepper jack stuffed version topped with a jalapeno slice - needed more heat, honestly, and one with smoked pulled pork, brown sugar and Larceny bourbon. They wuz guuud.

jhapka Thanks! Definitely interested in the chimney extension and also the expansion rack system. I see that is a basket in the firebox, I'll probably just put some metal mesh across the opening - I mainly want to keep large coals from falling out. I made a vertical baffle for the smoker, basically a piece of sheet metal with holes in it that goes across the firebox opening into the smoke chamber - seems to work well but sheet metal won't last long.Last edited by 58limited; September 5, 2022, 08:33 AM.

Looks like the weather may play a factor in today’s cook. That green and yellow blob is moving from left to right and I’m that little blue dot in the middle.

Tweaked a muscle in my upper back this morning playing pickleball, which may be another factor.
For the record, I’m not making excuses but I’ll take all the sympathy y’all want to give. ☺ï¸

Lazy-man-with-no-energy wibs. No trim, no brine, just rub, toss on the pellet pooper, nap, glaze, eat. The hardest job was making the mac salad. It was all good and easy, but not as good as what comes out of the 'Ol Locomotive.
BTW, if you get the chance, give Duke's Mayo's North Carolina Vinegar Sauce a try, it's pretty good.

Well, today was supposed to be the ‘real’ bbq cook. I had a rack of beef back ribs from Porter Road and a rack of baby back ribs I picked up Friday afternoon. I pulled the pork ribs out of the fridge to ‘peel’ and prep and now half the kitchen reeks like rotten pork. So, the store either sold me rotten ribs to start or the dip that helped me ruined them with his usual crappy azz wrapping job. Neither the plastic nor the paper fully covered them and I didn’t notice that until opening them up this morning (I just threw the whole bag in the fridge on Friday when I got home). Not the first time I’ve been frustrated with this punks lazy work. He always seems to be the guy I end up with too. I already have to make him show me every single piece of meat I buy or he gives me all the crappy odd shaped pieces from underneath, now I have to lean over the counter and supervise his wrapping job?
The girls don’t do beef ribs, plus Im guessing not enough food for 3 anyway. So, Im checking out with no real entry. Not going to cook all day for a meal for just me in an attempt to win a trophy. Imagine beef ribs, baby backs, corn bread, loaded baked taters, homemade sauce from a new 2 qt dutch oven, and a cast iron white chocolate blondie for dessert.
