I have been cooking a LOT of brisket/pork butt/ribs/chicken the last few weeks. They were all really good, but I need something to break the routine for this long weekend. As an in your face, I am thinking Spam burnt ends, but I really need something else.. So, What Else Ya got?..

tstalafuse That’s actually a pan lid holder from Ikea. I use it as a frame to hold the stack of meat etc together while it roasts. Search here for Schichten Braten and you find a post with a video link that will help. I would post it here but sadly I don’t know how. The roast is amazing.

loaded up with spice, cheese ,jalapeños,,,,bacon,,,,or whatever you think you want,,,

Put a brick of rubbed cream cheese in the middle of that bacon wrapped, 50/50 pork n beef, meatloaf. Takes meatloaf over the top.

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
Well, not sure what spam burnt ends are. I'm doing poor man's (chuck roast) burnt ends. Or how about a really nice steak? Porterhouse, T-bone, NY Strips.

RichieB I hear they are WAY better than any other kind of burnt ends, just with Spam.. I will believe it when I eat one.. A nice reverse steak is in my wheel house. No pictures, but I just did some ribeyes that were an amazing perfect rare (almost a perfect Blue)... So, What Else Ya Got?

rickgregory My wife would love that, but it would be fresh caught trout instead of salmon.. I have a separate smoker just for her. If you haven't tried Meathead 's hotnsmancy (or whatever it is called) it is, as the website says, Amazing.. So What Else Ya Got..
