    What Else Ya Got

    I have been cooking a LOT of brisket/pork butt/ribs/chicken the last few weeks. They were all really good, but I need something to break the routine for this long weekend. As an in your face, I am thinking Spam burnt ends, but I really need something else.. So, What Else Ya got?..

      STEbbq Making some fajitas from carne asada always is good.. I am hungry just thinking about them.. What Else Ya Got for a more traditional north of the border Labor Day Weekend?..

      Well, I have alligator, ostrich and elk steaks, ground yak (burgers?), and octopus to make octopus with punched potatoes (a Portuguese dish).

      I don't run across too many alligators or ostrich in the mountains, but Elk is available. A rancher down the road also sells yak and Scottish Highland cattle.

      tstalafuse That’s actually a pan lid holder from Ikea. I use it as a frame to hold the stack of meat etc together while it roasts. Search here for Schichten Braten and you find a post with a video link that will help. I would post it here but sadly I don’t know how. The roast is amazing.

    I have no pics,,,but A SMOKED MEATLOAF is one of my favs,,,,
    loaded up with spice, cheese ,jalapeños,,,,bacon,,,,or whatever you think you want,,,

      Put a brick of rubbed cream cheese in the middle of that bacon wrapped, 50/50 pork n beef, meatloaf. Takes meatloaf over the top.

      58limited My wife loves you.. I was just at a comp where the Open Class was a fish that everyone loved. Sadly, she was too busy serving a smoked peach cobbler.. So, What Elsa Got?

    Well, not sure what spam burnt ends are. I'm doing poor man's (chuck roast) burnt ends. Or how about a really nice steak? Porterhouse, T-bone, NY Strips.

      RichieB I hear they are WAY better than any other kind of burnt ends, just with Spam.. I will believe it when I eat one.. A nice reverse steak is in my wheel house. No pictures, but I just did some ribeyes that were an amazing perfect rare (almost a perfect Blue)... So, What Else Ya Got?

      seafood, grilled lobster tails, shrimp, sea scallops wrapped in bacon. I'm not a fish person, but pick a fish and grill it. then you can always go plant based. if you do you're on your own with most of us,

      rickgregory My wife would love that, but it would be fresh caught trout instead of salmon.. I have a separate smoker just for her. If you haven't tried Meathead 's hotnsmancy (or whatever it is called) it is, as the website says, Amazing.. So What Else Ya Got..

    Pork Belly burnt ends, chuck roast, pork steaks, a bacon weave wrapped sausage fatty. armadillo eggs, turkey drumsticks, and/or ABTs? Before you ask, that’s all I’ve got

      Reds Fan 5 I got some fire roasted Pueblo chilis that don't have a date.. Chilaquilies with some homemade queso and chorizo sounds like something I might want.. badly..
