We vac seal a lot of left overs. I like to to thaw in the fridge and then place (still in the sealed bag) in a pot of boiling water to reheat.

I soften both butter and ice cream in the microwave. I do use very low power, (~ 20%), to do it and it makes butter spreadable and ice cream easily spoonable.

If you haven't listened to Dr. Blonder's podcast discussion with David Chang on microwave ovens, you're in for a treat:

Skip the first 6 minutes of the podcast to get to the good part.

Shockingly to me the microwave works perfect for pulled pork. I haven't tried ribs in it yet. Currently we wrap ribs in foil and reheat in the oven and are satisfied with the results. Any leftovers that we freeze for later we just vacuum seal and reheat in boiling water. Always looking for better methods.

I usually microwave on High but using several short spurts. My reheating is also usually for small pieces of protein.

We've been using sous vide to reheat most smoked meats, and it has turned out really well each time. Haven't noticed any bark degradation. I will confess I also had a sort of knee-jerk rejection of the microwave but clearly there is more for me to learn there
