Has anyone here tried the impossible "beef". A local burger place here serves them, personally I thought it tasted too "meaty". They use heme, a ring shaped organic compound to which an iron atom is attached, aka porphyrin, and yeast extract to get the flavor. I have no issue with the ingredients but I thought the flavor was pretty bad.

I've had it via the Whopper at BK.
It's fine. It's not a perfect match for real meat but in the context of a fast food burger or any burger with mustard oniions etc it's a decent alternative to meat for vegetarians and vegans.
For the record, I've got nothing against all the faux meat things. I just was amused that this was launching in *Texas*.

It's an interesting linguistic challenge. If you're selling vegetarian alternatives that are meant to mimic some kind of meat, what WOULD you call that section of the store (or a business)? Guy Fietti stopped by a places like this in Minneapolis (https://www.theherbivorousbutcher.com) on an episode of DDD and their stuff looked interesting - they try to create vegan replacements for things like deli turkey etc - and they use the term butcher but obviously they aren't one.
It's like the name for stocks etc meant to mimic traditional products. "Vegan Beef Stock" is a self-contradictory term, but it's less unwieldy than something like "vegan stock meant to be used in place of beef stock."
All of this used to annoy me, but as I've thought about it, it's a genuinely hard problem to solve. For example, you could just say 'Vegetable stock" but that doesn't capture the intended flavor profile and you might have a few different ones.
All of this reminded me that I have some smoked chuck I need to make stew out of.Last edited by rickgregory; May 10, 2022, 01:49 PM.

Vegan Meat Merchant?
There is no butchery going on at a Vegan butcher. Vegan Beef Stock should really be called either Beef Flavored Vegetable Stock or Imitation Beef Stock.
Or, new name. When they came up with artificial vanilla, they called it Vanillin. While I get that the plant based food industry wants to both sell to adherents and convert folks over, calling flavored jackfruit "beef brisket" is deceptive marketing, imho.
