Just thought I’d report back. I gave this recipe a shot https://www.google.com/amp/s/eatingw...-sandwich/amp/ to see how it would compare. Cloves, nutmeg, and cinnamon in the recipe didn’t give me high hopes that I was on the right track, but I was pretty happy with the results! Added in some red pepper flakes for spice. Still not quite the taste I was looking for, but still some tasty sausage! I left it in bulk and vacuum sealed several 1 to 2-lb packages.
