    Need a good breakfast sausage recipe for pork butt

    I have some pork butt cubes that I need to process into something and I want to make breakfast sausage. I trolled for breakfast sausage ideas here, but couldn't find a useful recipe.

    Nothing fancy here, just a basic pork breakfast sausage that I can serve to anyone. I grew up on Bob Evans (Ohio boy), so that is my reference. I'm not looking for spicy, as I want to serve this to anyone, but it should be flavorful and delicious. Before I go crawling through the interwebs, I trust my friends and colleagues over here.

    Any help is greatly appreciated!

    Bob Evans has the best biscuits and gravy.

    I would be interested in a recipe like their sausage myself.

        Thanks for sharing, @Jerod . I had checked this one out earlier, but I don't want to have to mix a batch of Memphis dust and I think this might be too spicy given the jalepeno and red pepper flakes.

        HotSun I made it back when I had stepkids. I didn't use the jalapeño and the pepper flakes were hardly noticeable.

      One of my dear departed Aunts made the best breakfast sausage, but one of the major ingredients she used was discontinued years ago. Her kids looked and looked for a similar recipe. They finally found the mix linked below. I really like it, but I do mix half and half with their hot version to add a small amount of heat.



      If you are making it by the lb, it would be 9.08 g per lb of pork, but I round up to 10 g.

          Donw , I was reading some of these recipes and they looked familiar...I have one of their books. Excellent resource, IMHO. Thanks for the assist!

          Yes, this is the first and usually the only place I use for sausage recipes.

        This is a favorite at our house. I believe they have a Maple version as well.

        Enjoy breakfast with our traditional Breakfast Sausage Seasoning. Make mild-flavored breakfast sausages or patties with this mix of salt and spices. No MSG.

          Maple sausage
          16 ounces ground pork(75/25)
          3 tablespoons maple syrup
          2 teaspoon kosher salt
          1/2 teaspoon Accent
          1/4 teaspoon coriander
          1/4 teaspoon pepper

          Hot sausage
          16 ounces ground pork (75/25)
          2 teaspoons kosher salt
          1/2 teaspoon cayenne or Chipotle pepper (plus more depending on heat tolerance)
          1/4 teaspoon rubbed sage
          1/4 teaspoon pepper
          1/4 teaspoon crushed red pepper or ghost chili flakes
          1/4 teaspoon coriander
          1/4 teaspoon Accent

          Sage sausage
          16 ounces ground pork (75/25)
          2 teaspoon koesher salt
          1/4 teaspoon garlic powder
          1/2 teaspoon dried parsley
          3/4 teaspoon rubbed sage
          1/4 teaspoon pepper
          1/4 teaspoon thyme
          1/4 teaspoon crushed red pepper flakes
          1/4 teaspoon coriander
          1/4 teaspoon Accent
          1/8 teaspoon Mexican oregano

          Regular sausage
          16 ounces ground pork (75/25)
          1 1/2 teaspoon kosher salt
          1/2 teaspoon parsley
          1/4 teaspoon rubbedsage
          1/4 teaspoon pepper
          1/4 teaspoon thyme
          1/4 teaspoon crushed red pepper
          1/4 teaspoon coriander
          1/2 teaspoon Accent​

            Everyone is different so it's difficult to sense what spice blend would be just right. I'm just in from a trip, home a little while, so catching up. I've made breakfast sausage many times, and use the breakfast sausage spice blend from Penzey's. I have also used their Italian sausage spice blend, and like it also. Just an easy way to go about the seasoning, if you are looking for that.
