My first time smoking burger patties. A friend made 4 ounce patties from the spoils of his hunt, 2 Waterhogs and a Kudu. I smoked 68 off for lunch time. The patties a 50/50 mix and some pork fat were partially frozen when I put them in the smoker at a low 85 C (185F) with a few mesquite Weber wood chips (I’ve only used once before). They weren’t in for long about 30 min before removing and finishing on the flattop. They took on a light smoke that I thought was ok but would have preferred a tad more. The eaters loved them.

I love kudus! Well, seeing them on TV and the occasional wall mount if I'm in a place with wall mounts of such creatures. But was it a greater or a lesser? And how does it taste?

Kudu tastes great especially the fillet done rare over a hot fire or flattop and seasoned only with salt or biltong. Warthog is very gamy and not my kinda taste preference but okay as a burger patty mixed with spices or salami or in sausage. I stand corrected on the spelling of warthog as i generally know it by the afrikaans name VLAKVARK
