ComfortablyNumb - ha! As much as you would think, I don’t think I’ve ever seen green or red chile ice cream offered! Although I do think it would be good!
Now i have had red and green chile honey - and when I use to eat sopapillas, dang that was the best way to finish up your plate - load up the sopapillas with honey and then sop up all the leftover chile! So stinking good!!!!
Oh right!! texastweeter ‘s post reminded me. I made an incredible banana stracciatella (chocolate chip only really thin strings of the chocolate- no chunks) That’s definitely one of my favorites.
We made a great version of s'mores... milk chocolate ice cream, graham cracker pieces toasted in a skillet with butter, and some mini marshmallows. Add a little caramel sauce and you have a winner.
Cajeta makes everything taste better, especially ice cream. Here is my recipe for Nutty Goat Swirl ice cream. The spiced pecans and cajeta work really well together.
A sushi place we used to go to served ice cream. If I remember correctly the flavors were '"green tea" and "?kidney bean?" or "red bean" maybe. Some kind of beans. Not soy. I just looked at their current menu, and they now have "Nutella Cheesecake" flavor. I'd be willing to taste Nutella ice cream.
My favorites are so pedestrian. I love dark chocolate ice cream and caramel dripped on vanilla or chocolate with pecans. I also love hot fudge sundaes and Ben and Jerry's Chocolate Fudge Brownie. I don't want hunks of fruit in my ice cream.
One of my favorites since I was a little kid is chocolate malts, and I better be able to taste the malt and chocolate.

I grew up about 10 miles from Velvet Ice Cream in Utica, Ohio. Their shop is in an old grist mill, attached to their factory, and has been there forever. Always liked their Butter Pecan and Cashew, Strawberry Creme, Black Cherry, and their Cinnamon flavor which they only bring out around Christmas.
In fact, my wife and I drove out there on Saturday and had a couple scoops, after hiking in Mohican State forest. Great day to sit outside by the pond and listen to the big water wheel turning.
One of the unique flavors I've had that stuck out with me most is cereal milk ice cream.
It was first made famous by Momofuku Milk Bar/ Christina Tosi in NY and I'm sure you can find a recipe online, but from my memory you make cereal milk by toasting cornflakes soaking the toasted cornflakes in milk to flavor the milk. That milk is used to make the ice cream
