I'm not a fan of milk chocolate or any sweet chocolate below 72% cacao content unless it's part of a candy. Chilling an unadulterated chocolate bar for taste isn't something I would do.

I’ve eat 5 room temp chocolates tonight from my daughter’s gift box her boyfriend brought over today. They have paired well with the bourbon as well

I like a high cacao chocolate and I keep it in the fridge. I don't notice a difference in the taste but if your cacao level is high, it's usually got plenty of flavor.
