Can't handle the concept (for food safety reasons) of eating raw eggs--unless they're pasteurized, which is another step in the two minute mayo recipe for me.

This! This is all we eat for mayo!

Dukes for sammies and for a bit added to Greek Yogurt when making toum.

Kewpie for potato salad, etc. where its inherent egginess can really shine.

+1 on Kewpie. I use it for Japanese potato salad. Not sure how to attach a Paprika file to a Comment. I'll jump over a create a post in Recipes.

I must have an unedumacated palate because I bought some Kewpie and don't think much of it. Duke's is as good as mayo gets unless you make it yourself.

Make some Alabama White Sauce with Dukes (some bottles have a recipe on the back).

I was raised on miracle whip, probably because it was cheaper. But when we went to Violets house (my grandma), she had hellmans in the fridge. She made us sandwiches on Kaiser rolls with Polish ham and lettuce. The best! Chicago native in case any of y’all forgot. Eating it was like butter compared to miracle whip.

BF brought home MW the other day and I tried it and cringed. Anyhoo, now that I live on the west coast, it’s best foods. I ordered Dukes online after hearing the praises sung here. I’m hooked. Bonus? It’s at the amazon fresh near our house. But truth be told, I make my own more often than I purchase it.

Troutman We were in Glenview and then Riverwoods. Family had a business on W Madison St downtown. I remember having lunch on the 40th floor of Kemper building, eyes glued to the window at 10 years old 😳
