I just wanted to share my Turkey carving experience this year. All I can say is WOW. I am fortunate enough to have a brother in law that is a chef and he showed me how to remove the wishbone prior to cooking the turkey. And the result of that was the ability to easily remove the breast in its entirety with ease. I also shared this with several friends that I knew were cooking and they all thanked me profusely for the tip.
I'm not sure of the rules here for posting other URL's but a quick google search will yield YouTube videos and articles discussing the advantages of doing so.
Here is a paragraph from one of the articles: "What makes carving difficult is the wishbone, and not just because everyone fights to pull it apart at the dinner table. It’s an engineering problem. The y-shaped bone, which runs along the top of a turkey’s chest, actually gets in the way of a clean cut anytime you try to slice breast meat from a bird. The result: ragged strips and crumbs, instead of steaming slices"
