    Sunday!

    I've got a 6.5 lb turkey breast dry brining in the fridge, potatoes waiting to be peeled, fresh green beans, a Sierra Nevada Oktoberfest beer cracked open and I'm watching the Seahawks beat the heck out of the Jets!

          Looking forward to the photos of the turkey. It's not politically correct as a Niner fan - but I am rooting for the Seahawks today. Something happened to the allure when they moved to Santa Clara.

          Here's the turkey breast after four hours, or so, of dry brining and putting on Simon and Garfunkel. Getting the Hasty-Bake hot right now.

              I really started this one late .... Should have dry brined last night, not this morning, and then got the rub on at least 2 hours ahead. That said, it will still be good. I run my temp at 325-350 for turkey breast, use a couple chunks of apple wood for smoke.

              Also, For a turkey breast, I generally don't run a gravy pan underneath. Only do that for a full turkey. I will make the gravy in the house. However, if I was doing that for T-Day, I think I'd do my gravy pan under the turkey breasts, collect the drippings, etc

            One hour ... Internal temp is 113, fire is running 340 .... looking good.

              My daughter was worried that it wasn't done because the meat was pink .... had to have a temperature vs. smoke discussion.

                  Looks fantastic! I used to do full turkeys on Thanksgiving but my wife likes the bacon wrapped breasts. We'll have to see what we do this Thanksgiving. Great job!

                    Wait.......what happened to the wings and legs?!?. Oh great, now they are so GMO, they don't even have legs or wings. PETA is gonna love this one.
