    Here Chickie, chickie, chickie!!!

    Yup, the topic is yardbird. As some of ya'll know I recently hiched up with my bride, the most wonderful person on the planet. There have been a couple of differnces as can be expected, but one of em I have to do the dastardly task of hidin from the little lady.
    i did a stir fry of some sweetened red bell peppers, some snow peas and som bok choy. The star of the show was a Scechuan chicken via Sichuan Mala saice. As I'm a cookin my dear wife said make sure you clean the chicken multiple times so it is CLEAN. Therein lies the problem. I do not wash chicken before I cook. Which leads me to wonder if any body else here subscribes to my scientific training or are ther other chicken washers among us.

    You can clean till the cows come home, it does no good with chickens, unless you dropped em on the ground. I rinse mine off before cooking, but only out of habit.

      My friend is a chef and swears by washing chicken, I am not a chef but I don't wash chicken because I feel it gets more things dirty... and the USDA agrees with me so THERE!

        You can't wash out salmonella, but you can cook it out.

          Best response yet. That is the reasoning by the USDA for not washing as you may contaminate more than you clean if salmonella is present

        Pull out of the packaging, pat dry, dry brine, cook. Whatever is on the birdie is gonna get killed by the cooking of said birdie until the internal temp is 165F

        That said, if your lady wants you to clean it, well, I guess you might want to clean it just to keep from starting a civil war :-)

          To each his own when it comes to washing chicken. I don’t and there is no disagreement in the house. It takes very little effort to rinse it. I don’t think the difference merits a line in the sand, so my suggestion is wash the chicken. There is much to gain and little to lose.

          I always rinse out whole chickens and turkeys. Usually the cavity had remnants of something inside. Just buying cut pieces I don't rinse.

            No washing here. And I don’t clean my chickens either. Pat dry or rinse a whole bird only because it’s still gots some ice inside the cavity.

              In the Caribbean they often wash chicken with a squeeze of lemon or lime juice....me...I dont wash it ever.

              Washing chicken spreads contaminants. It's a nasty practice. But since I'm a marriage counselor, I cannot suggest that you say that to her.

              I don't rinse chimkim, two reasons: A) rinsing flings that salmonella all over the sink and counter and your face, and 2) cooking it cleans it.

                Panhead John I'm not talking about water spray, I'm talking about rogue microdroplets that can carry the bacteria with them, the ones we didn't know were being spread around.

              Just make sure you only buy meat from roosters that have had a vasectomy, then its already sterile and nothing to worry about.

              I subscribe to the idea that washing them only spreads the germs farther around the kitchen. So no washing for me.
