    Where does one go to find some decent grits + whatever you guys all are making to go with them on the menu? I am intrigued enough to try a “good” version to up my excitement level to make this, or it is just like 15 minutes to cook? Then I need to find some of these brands and a single-serving type size…

      I use a lot of water and cook them quite a while. I read that you should be whisking them while cooking to help make them creamier by releasing starch. I have never done that but I am going to start. Also, they need to be salted or they will be bland as heck.

      I've made them using chicken stock for a dinner application, and I also make them using whole milk and finishing with some heavy cream for creamy breakfast grits

      Polenta and grits are two different types of corns. Flint corn and dent corn.

      texastweeter huh, I thought they were the same …. Maybe that’s why I don’t like the grits I make with polenta corn meal. I keep both from Bob’s Red Mill, but really thought they were basically the same thing.

      Grits is dent corn (higher in starch, lower in sugar) that has been treated with an alkali to make hominy then ground. Polenta is flint corn (higher in sugar lower in starch) that is simply dried and ground.
