I also eat mayo on my egg sandwiches. All the time and have eaten them that way since I was a kid.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
Okay, here’s how this went down.
Darkly sautéed onions.
Kielbasa.
The wild card: roasted red pepper.
Eggs.
Provolone.
I mixed mayo, bbq sauce, and hot Pickapeppa sauce.
Assembly:
This was a good sandwich. But I have to say, I’m just not a big fan of Pickapeppa. It seems like something I would like, and I used to like it, but now I think it’s too overpowering no matter what I put it on. I only used a little bit here, so it was all good.
