I also eat mayo on my egg sandwiches. All the time and have eaten them that way since I was a kid.

I second hollandaise. Toast something for underneath and call it a Benedict.

For a sausage breakfast sandwich, I would keep it simple. Add a slice of cheese and some mayo to the sausage, egg and bread and I'd be good to go.

Okay, here’s how this went down.

This was a good sandwich. But I have to say, I’m just not a big fan of Pickapeppa. It seems like something I would like, and I used to like it, but now I think it’s too overpowering no matter what I put it on. I only used a little bit here, so it was all good.

I was gonna say…. Hot-pick-a-pepper? Didn’t know there was such a thing. I like pick-a-pepper a lot, though. I use it as a replacement for that other crap….. ketchup. 🤣

Seriously, I use it for topping meatloaf, for example. I basted wings with it a few times, too. Seared burgers with it.

Good looking sammi. I like to simmer the kielbasa in stock with crushed tomatoes and kale. Slice the meat, drain the kale and drop them on toast of your choice with dijon, and top with a fried or poached egg, salt, pepper, and red pepper flakes.
