    Corned Beef Froze During Brine! Help!

    Hey guys! I'm making my first corned beef right now following Meathead's directions. I've come into a problem though! My refrigerator, which is in my shed, dropped its temp down to the mid-20 degrees on day 2 when the outside temps took a dive. The water got slushy and the meat froze to the bottom of the brine bucket. I'm getting the temp back up now. Do you think the meat will be alright/safe still??

    The meat should be fine. Just go the extra 20% in the cure that the calculator allows. It should be okay. How many days was it frozen?

      Top info right there. Salt penetrates slower when it's colder.

    I have put corned beef in the freezer without issue as well as cured pork belly that I knew I wasn’t going to get to in time.
