    Probing for "Buttah"

    -I have a chucky double wrapped in heavy-duty foil getting close (188*). I usually have foil pans with a single sheet sealing everything in. How do I probe for tenderness without poking holes in the foil? unwrap it? The top has a double crimp,plus the ends folded in. If I go in from the side, I'll have leaks all over my towels.
    Any simple work arounds to this?

    I know 'probe-tender' is a popular judgment of doneness, but I only stick it once. No chance I'm pin cushioning it, too messy. I look at the temp, if it's 195+ and I poke it once at the top and if it feels slippery I call it good and give it a 1hr hold w/ a slowly dwindling cooker temp, faux cambro style.

    Once from the top. You can pinch the hole in the foil closed enough and use the same hole later if need to.
