    Tenderloin

    I am doing a tenderloin (chateau Briand) on a 2 zone setup on a Weber gas grill. Reverse sear planned. O'Leary's cow crust waiting.
    in the tested recipe it has the meat over a gravy, which i am not doing, but should i still put a water reservoir in the grill, or is that not necessary? If so, how would u recommend I set it up.

      Maverick 733
      Thermapen (ok..4 thermapens)
      Thermo works DOT (or two)
      Fireboard (probably my favourite)
      Thermworks Smoke (or two)

      Accessories:
      SnS (original, plus and XL)
      DnG pans, 6 or 7 of these
      Vortex
      Grillgrates
      and, maybe some other toys as well

    I would lean towards no water pan. I don’t think you need extra humidity for that cut. Hope it turns our great for you.

      No water pan necessary, unless you need it to keep the grill temp low enough.
