    Wet aging Tri-Tip sold in plastic wrap....

    Gentlemen, I tried to find a post that would answer this question but I am in a bit of a hurry and couldn't find what I was looking for.

    I purchased a couple of tri-tips that were on sale and I don't plan on cooking them for a few weeks, maybe more. They were packaged on April 7th and in the usual Styrofoam tray w/plastic wrap. I've had good luck with wet aging briskets in cryovac in the past.

    I have a vacuum sealer and my thought was to unwrap them, dry brine them, put them in the fridge for 30 days and then cook or freeze them.

    Can I do that as long as they've been vacuum ealed or have I missed my opportunity because it wasn't in the cryovac initially?

    It can be risky.

    I personally would not do it. If you do, and you see any bloating of the bag or if it smells funky, I would throw them. Sanitation will be key.

      Thanks, Spinaker! Better to be safe than sorry. Triming, salting, and freezing tonight. Not worth it.

        I tried it with a trimmed brisket, molded in a couple days. The pre-packaging sanitation was subpar.
