    Well, the meat's in the bag. This is an American brisket, the label is "Chef's Selection". I've done it before, great quality.

      Well you're ahead of me. I ordered the wrong bags (I was out), just re-ordered the right ones last night. I thought I found them here in town but were the wrong size. Anyway my brisket has wet aged 30+ days so I'm only going 45 on dry bagging so I may catch up to you. Good luck with yours, I'm excited to see the results !!!

        That may be the best lookin' brisket I have seen. I am lookin' forward to everyone's attempt at a 60 day dry aged brisket.
