    Great lookin' meal!

    Alas, in the spirit of Meathead's myth busting, I must report that the Hatch chile is pretty much a marketing ploy. Here's what Dr. Paul Bosland and Dave DeWitt (two world famous chile heads) say on page 52 in their book The Complete Chile Pepper Book:

    "...There is no Hatch chile cultivar--Hatch is merely one place where New Mexican chile peppers are grown. A mythology has evolved about Hatch chiles being superior to other chiles, but it's simply not true, and there's simply not enough acreage around Hatch to grow all the chiles labeled as Hatch...two Arizona chile growers confessed to us that they shipped their chiles to Hatch..."

    Now, having said that, if you can ever make it to the Hatch Chile Festival, do so! And keep eating chiles!

      Being from New Mexico, they are definitely superior than others. Especially Colorado 😁. That’s why we have a chile license plate! Hahaha

      Willy we buy vanilla, saffron, tequila, cinnamon, onions, garlic and whisky/Bourbon along with many other things from certain parts of the country/world. But somehow there is no mythbusting when it comes to Bourbon, tomatos, muffulettas or champagne. Why is that?

      I can promise you hatch green chili is fantastic and not the same as a green chili ground here in Southern California. No matter what those people said.

      Perhaps there is no varietal. But Terroir is a real thing. Just like liquefaction is to California.

      And like barelfly said "They have a license plate and everything!"

        Not clear on "no mythbusting" re cinnamon, garlic, etc, but I stand by my comment that Hatch chiles are not "special", but they are just fine. I grow several varieties of NM chile every summer and they are every bit as good as the Hatch-grown varieties. It IS a marketing gimmick.

      No worries, there are good green chilies and there are GREAT green chilies! I agree, you can get them from lots of places, but sometimes there are things in the soil that make a certain place have an edge when it comes to growing them. I won't pretend I'm enough of a connoisseur (I damn near spelled that right before I looked it up!) to be able to tell the difference, nor do I get great or even good green chilies frequently enough to differentiate them, but I know I like them as a whole! lol


      And FishTalesNC I want to try those enchies... I am going to do a smoked chuckie JUST for this purpose, but, most of the time I've seen green chili enchies, they've been with a white sauce or a tomatillo sauce. I looked for that brand you have the pic of on Amazon and can't find it, which shocks me, they have EVERYTHING! Would I be able to find that at a Mexican grocery? We have a few Hispanic supermercados in the area I could try, I might even make a special trip for it! But the idea of making smoked pulled chuck roast leftovers into green chili enchiladas has me salivating already!

        realdocBBQ I wish it was easier to get that sauce mix. It’s what I grew up on (being born in Clovis, NM). It disappeared for a bit, but you can now order it from a local grocery there, problem is a half case is the smallest option. It works for us since we split it amongst our family and we all love it. Can’t wait to see how yours turn out!

        Well, crud. No way I will use that much. Are those 1 lb bags? Is there a substitute brand you think is "almost as good" we might be able to get in smaller quantity? And anyone else who has a really solid recipe for a cream enchilada sauce with green chilies, I'd love to have it! lol

      realdocBBQ I don’t know of any substitute brands but HouseHomey recently shared his red enchilada sauce recipe I believe, I’ll be giving that a try!

        FishTalesNC I smoked my first chuck roast yesterday and I plan to make the green chili enchiladas today. Did you add anything other than green chilies to the meat before rolling in the tortillas? I also ordered some of the El Monterrey sauce mix to try but will use some of my homemade red Hatch sauce for today's batch. Merry Christmas!
