    Reverse Seared Ribeye V5.0

    I know I am always posting pictures of my reverse seared steaks but I threw a little curve ball in this time.

    After getting the steak to 115 degrees I finished it on my Blackstone Griddle.

              I might have held the steak on the Griddle a little too long. Got a band of medium well around the steak. Only seared each side for one minute. Also the sixer of PBR consumed during prep and cooking might have impaired my judgement a bit.

              I use the same technique, but I have a recipe for a chili rub that makes an AMAZING crust. Just let me know if you want the recipe. I also use bacon grease and canola oil on the griddle (I usually use the black iron sear plate on the side of my grill).

                I brushed the steak with vegetable oil before I seared it. I'll have to give bacon grease a try.

                I have a griddle top over a Blaze sear burner, gets HOT. I use beef tallow i make from brisket fat trimming.

                I use beef tallow too many times. Right now my deep fryer is full of it. Took 2 gallons, so I am out until i build up my trimmings to make a new batch.

                That’s what I’m planning on doing with my steaks ssandy_561 except I will be applying ghee on them.

                  Ghee works well too, I just prefer bacon grease or tallow. Ghee a close third (1 tallow, 2 bacon grease & canola, 3 ghee)
