    OmegaDog12 Dude, I'm with you on the "not sure what to do with myself when I have a goof off day"! And the Barbecue Food Truck game is fun, and a lot of work!

    As all of us know, Brisket is the hardest of the Barbecue meats to so well consistently. The space between Undercooked/Tough and Overcooked/Dry is small. When you pull makes so much difference.

    The other big difference point is cooking the type of briskets that should be made in to the ole' Chopped Beef Sandwich, also known as Select. I haven't cooked a select brisket in about 3-4 years, so maybe my memory has faded a bit. We use CAB Choice or Prime on our truck. The Prime's at Sam's are good, about the same as the CAB Choice. The CAB Prime are really good, but harder to get. I buy ours from SYSCO. It's just so much easier to source from the commercial supplier.

    Choice from the grocery store is not as good as CAB Choice. The marbling is not there. And that means dry flats. I hate dry flats!

      I sooo would only get Select if I was chopping everything up. It's super nice when someone asks me to do chopped for 300+. They can get the briskets or I can get them with blindfolded.

    Thanks to all for comments/suggestions. I've looked into all the licensing requirements here in SC ( it helps that my partner who is a chef for a well-known food supplier) as well as costs, truck, equipment, etc. To be honest, the "having something to do in my old age" (and, of course, bragging rights)is more important than the money. The number one cause of death in old people is doing nothing and I'm not going to die from doing nothing. Costco prime it is and Huskee, thanks for the article recommendation. It brought up a lot of points that I haven't considered. Butchman - Your idea is great. I think the first cook will be free in my neighborhood using different cooking times, injections, rubs, etc. with a vote on the best-tasting brisket, sandwich and breads. Again, thanks to all!

      It's good to hear that you have a plan. Retirement is looming for me too and I have no idea what I'm going to do. I have a 40+ year work routine history and overnight that's going to completely change, all of a sudden I don't do that anymore. It's a good but scary feeling. There's only so many fish to catch, rounds of golf to play and meat to cook before it all becomes mundane.

      Anyway, congratulations on your food truck plan, I hope it's a rousing success!

        My dad hit that a year ago this past October, he had the same worries. He worked at the same shop since hight school, midnights, same routine for 47 yrs. But, he's happier than ever. He lived right, and now has more cash than he did while working, growing up we didn't have much. I'm glad to see him doing well. Hope you're in the same boat!
