    Well crap....

    I have a Creekstone Master Chef brisket coming in this afternoon for the weekend tailgate and I am really going back and forth on how I want to cook this damn thing. I actually had a dream about it last night wherein I tossed it in the planned SV bath and the tank broke... and let all of the sharks out... who commenced to drink all my beer since they were out of water.

    But before I digress too far into my ole man dementia, I have SV'd the last half dozen or so of my briskets and I have a bad hankerin for an ole skool, slam/bam, mesquite fired Texas brisket and burnt ends. It was bad enough to cause me to crank up the YouTube's this morning after my early a.m. workout to watch a few competition brisket vid's... So, at the moment I am tetering towards draggin out a sharp knife and separating the brisket and giving it a close trim and injection before I toss it on the pellet pooper. Regardless of whether I SV it or not that will happen. What happens when I pull out the butcher paper is another story... the flat may still go in the bath and I have burnt ends for the tail gate... which means I drink bourbon since the damn sharks will have their way with my beer. If I don't SV, then I can have my sliced brisket and beer...

    Decisions, decisions.....

      It was a dream when the tank broke. It was still a dream when the sharks got it. But when they drank all your beer, it was a nightmare......

            I have never sv'ed anything and am very happy with my briskets. I don't hear the voices since I sacrificed a brisket in the kettle. And the sacrifice tasted great.

              LOL... SV'ing in not necessitated by the inability to smoke a brisket over coals... think of it as not living life in black and white. Be not afraid to broaden one's resume in the culinary arts. Besides, there is never a bad day when there is smoke, beer, and one is not getting shot at. The voices tend to get a lil testy when the thermobaric's start.

                Hey I like beer, and smoke, and even sharks (caught a couple during my time, nasty creatures, pee thru their skin).

                Still no brisket.... So... Clean the smoker and charge the hopper. Here is one of my trade secrets if you can figure out the blend percentages..
