Update: We stalled pretty good at 160 for about 45 minutes at noon, and then started dragging when we got out of it. At 2:15 we were only at 171, so I adjusted the pit temp toward 250 instead of 225. Not sure if that was a good idea, but I think it was moving a little too slowly.
In any case, a few minutes ago we hit 185 so I checked to see if any of them were probing like butter, and I'm glad I did. A few were well into the 190's and were probing nicely, so I pulled them. See the pics. They're hand-held! And, absolutely delicious! Can't wait for the rest to finish.
Beautifully done! Beef short ribs are BY FAR my favorite thing to cook in my smoker. Probably my favorite thing to cook since they are also my favorite thing to eat!
