    Tonight's Kettle/Vortex Cook: Skirt Steak

    Tonight, I did a direct cook with the Vortex wide side up to provide a large enough direct source but still only need half a chimney for good heat:



    Inspired by Henrik's post on Argentinian BBQ, I did nothing to it but a heavy dry brine of salt for a few hours. Nice and quick sear/char

                      Thanks all! It was good and i have half left since I was solo last night. If I were eating carbs, I'd probably make it into nachos. Instead, I'll probably just snack on it while watching the games. Tonight I'm doing salmon - half with my usual rub and half either naked or salted
