Brisket Question

    Great looking cook! The brisket does look to be thinner than some. Not a criticism, just an observation and possible reason the cook went quicker than you expected? Options that might help make your next cook juicier include injecting and/or wrapping (foil or paper). Have fun experimenting!

      Good-looking brisket there, 6th Borough BBQ . Each brisket is so different, that you may do exactly the same thing on the next cook and find it's perfect. That said, I like to inject briskets with Butcher's Prime Injection from Butcher's BBQ. I call it my insurance policy.


      Here's what Meathead says about Butcher's injections:

      Many competition cooks like to inject with a product called Fab B Light or Butcher BBQ Brisket Marinade, both moisturizers, tenderizers, and flavor enhancers. Fab B contains hydrolyzed soy protein, vegetable oil, sodium phosphates, monosodium glutamate, autolyzed yeast extract, xanthan gum, disodium inosinate, and guanylate. Butcher contains hydrolyzed vegetable protein (hydrolyzed soy and corn protein and salt, with partially hydrogenated vegetable oil [cottonseed, soybean] added), monosodium glutamate, sodium phosphate, and xanthan gum. Some traditionalists think this is way too Barry Bonds and are repulsed by the idea. The results speak for themselves. They are winning. A lot.

        Agree! I injected a butt once with Butchers and thought it had an off flavor (may have been the butt?). In any instance have been reluctant to inject a brisket. The number of good reviews convinced me to try it on my last one and is was great! I'm now a fan of injecting at least the flat.

        Hmmm, interesting, HorseDoctor . I've used Butcher's a lot and have not had that experience. I watch the expiration dates, though. I never get all the way through one bag of the stuff. Also, I bought some of their phosphate only so I can mix it with whatever else I want to inject instead of their flavored stuff. It works well, especially if I want to brine something and not worry about all the salt in the flavored Butcher's offerings.
