Cookers:
Large Big Green Egg with a Ceramic Grill Store rack system, and the SnS setup.
Weber Genesis SA-E-330 LP INDIGO with SS Grates, Weber Crafted frame kit, baking stone, griddle (2/3), all from Ace Hardware.
For the first time in a long time I have no kettles as I gave them all away.

SnS #3 with certificate. I was their first customer.

SnS and Thermoworks instant read and leave-in thermometers.

Rubs with salt: Meat Church Holy Cow.
Rubs without salt: Home-mixed versions of previously sold SnS Grills Rocky's Rub and Not Just for Beef using their recipe. SPOG.
Spices: Lots of 'em.

There you go... now you know that smoking a brisket is not that big of a deal and is not difficult.👠Learning to prep a brisket properly is the important part of the project. Smoking meat for 14 to 16 hours at 225° is not very difficult at all. Infact you can sleep though half of it if you have a smoker that is a set it and forget it cooker.
Job well done and that meteorite looks fantastic.

Breadhead I think about 4 hours in, but the SnS wasn't full and it still had some left. What I did several times was refill the water pan.
