        There you go... now you know that smoking a brisket is not that big of a deal and is not difficult.👏 Learning to prep a brisket properly is the important part of the project. Smoking meat for 14 to 16 hours at 225° is not very difficult at all. Infact you can sleep though half of it if you have a smoker that is a set it and forget it cooker.

        Job well done and that meteorite looks fantastic.

          Breadhead I think about 4 hours in, but the SnS wasn't full and it still had some left. What I did several times was refill the water pan.

          When I'm doing that type of cook on my kettle and SnS I fill the SnS as full as I can get it. Light 12/15 briquettes and let that slow crawl down the briquettes begin.👍 Some guys can get 8/9 hours out of 1 full load of briquettes.
