    Birthday brisket in for Sunday

    16lb prime from Costco (2.99/lb). Big bad beef rubbed in for the evening. In GMG Daniel Boone, w smoke tube for two hours extra smoke and water bath. Starting at 225 for 2 hours for a little extra smoke, then 235 until 195 IT for poke check. 48th birthday almost here. Have a good evening. Mitch

              ​~12 hours in 167 IT. Just flipped. Looking good so far. Using Cookin Pellet perfect blend w a little cookin pellets hickory added. Bark added in. Mitch

                  Turned out pretty sweet. Ended up being about a 14 hour cook and about 6 hours in faux Cambro. Cooked faster than I was guessing. The flat was sorta dry but tasty. The point was nice, moist, and juicy. I still haven't nailed the feel of a well cooked flat. The point gets all soft and buttery upon probing. The flat not so much. Probably would be better to separate two pieces and cook each to its best temp and feel. Overall enjoyed all of it and my guest did also. Girlfriend made a nice Butter pecan cake w a lightly cinnamoned cream cheese frosting. Delicious. It was a good Birthday and I got a electric knife sharpener as a gift.
