    About to get real smelly around here! SnS fired up. Craycort iron's installed. Reverse sear on the menu! 4 lb prime.

          This I love! Question, are you going low and slow - then reverse sear OR High tem, get to temp then reverse sear?

              I did indeed brotha! My HEB had about 8 of these babies sprawled out. It was very hard choosing! My HEB is the one down here on 646 I shop at. Love the butcher there. I see you are up there in Kingwood. I'll bet they are even bigger up there!

            SoCalTim yep brotha! I go low and slow all the way shy of carry over. Let it rest and sear. Been doing it this way forever so it's what I know. Right now holding steady at 225 and smelling great. Trying out some B$B bricks today. First time using them for a reverse sear. So far I love them. Seems to take a bit longer to get going but man you can hold em steady.

                Every couple week Costco has those available I always want to get one and try it. I'm a little intimidated by it (especially the 19.99 a pound part lol) I'm afraid I would somehow ruin it. I love the way it barely fits on your grill they clerk always tells me it will feed 2 to 3 people. I always come back or one of me!

                  Yep! Amazing these were 13 bucks a pound today. My butcher told me that last week they were 9 bucks. 13 for Prime, just could not pass it up!

                Lonnie that is a thing of beauty. I've been thinking about one of these for about 2 weeks now. There's an Uncle G's near me that sometimes has tomahawks, but not that big. I think about 2----2-1/2 lbs
                can't wait to see the final results

                oh btw thanks for screwing up my thoughts on dinner tonight. LOL.

                  In for the flip flop. Turned over when I hit my midway point. Not bad. Right on schedule. This will be about an hour cook to get her up to my temp, then I'll let it carry over while I blaze up the place!

                  I always love how reverse sear leave's these little "faux" sear marks! Flavor tracks!
