    Wet Aged Brisket question

    Hey everyone,

    Quick question -- i'm having my meat/beer refrigerator delivered today, as long as a Snake River Farsm Wagyu Brisket (Christmas gift, YUM). I'd like to wet age it in this fridge for a while, how long do people normally do that?

      Apparently those things are already aged 28 days. I buy from the store and go 40-45 days.

      I see the 28 days as more of an economic decision and money on the shelf thing, than an optimum wet-aging period.

      ​​​​​​A top notch brisket like that will more than likely be super good as is.

          I would usually give them another 2 weeks after you get them to go 45 days, then either freeze or cook them up! I have gone a couple more weeks and that doesn't hurt anything.

              I would age first. Just to get that out the way. That way all I have left is the thawing before smoking. Not saying it would be wrong.

            I would let that thing go another 10 to 15 days. It would be ridiculous.
